Wow. Wow. Wow Can you use skim- although I guess that wouldn't matter if you are using bacon... but we use turkey bacon- that would work, too I suppose. Morgan, I always use 1% in our test kitchen recipes, and skim at home. skim would work beautifully here... Go for it. PJH
