A recipe that makes twelve muffins and uses three eggs is not particularly healthy. I will stick with the oatmeal muffin recipe that KA came up with this summer. It used blueberries, but other fruits could be substituted. Marliss, depends on your diet. Eggs are recommended for many of us with low or moderate cholesterol - they're a good source of protein and vitamin D, and considering you get 1/4 of a yolk in each muffin, pretty low-fat.
