Oh! Wow! Had the potatoes for the crust and the stuff for one of our favorite quiche (onions-bacon-spinach). Of course it was delish! Besides I love potatoes in ANY form. Love leeks...but my store has them rarely, but I'll watch for them so I can do your version.
