Hi Bet. The perfect popover is intended to be nice and airy inside. If you are looking for a denser popover, you could try adding more flour to your recipe to make a thicker batter. Reducing the temperature at which you bake them will also change the final appearance. Popovers need a fairly loose batter paired with a high temperature oven to properly bake. Changing those factors will change the final texture and rise.
