What an interesting conundrum, Alan! The lackluster results could very well be due to a difference in the weather or humidity. If you're not already doing so, you'll want to measure your flour by weight using a scale for the most accurate results. Additionally, you can try preheating your popover pan empty if you're not already doing so. Adding the batter to a searing hot pan can increase the amount of pop you experience. Last tip? Be sure your oven is fully preheated and at the right temperature before putting the popovers in the oven. Regardless, December is right around the corner, so your luck should change! Kye@KAF
