Thanks for sharing your experience with us as it gives us a chance to prime you for popover perfection! Our mini popover pan takes about 10 minutes less than full-sized recipes, which means you'll likely want to bake the mini version made from our mix for about 24-28 minutes. Another approach you can try is baking the popovers for 20 minutes without opening the oven door and then reducing the oven to 350°F (again without opening the door) to bake for an additional 5 to 10 minutes. This should turn the popovers a deep, golden brown with a perfectly cooked interior. It is somewhat normal for popovers to sink after removed from the oven; you can try cutting small slits in the top of the popovers to help vent the steam to see if you like the appearance and texture that yields.
