I bought a popover pan at KAF after a class. It came with a popover mix. I used it and followed the directions. It doesn't say to put it in the lower third of the oven. I had bought the mini pan and the mix addresses a full size muffin or popover pan. The KAF regular recipe state 20-23 mins. at 400 for the mini. My oven had been heating for the 30 mins while I was leaving the mix set for 30 mins per instructions. After 20 mins in the oven they had risen very nicely and I took them out of the pan shortly after taking them out of the oven. My husband and I shared one. As we walked away from the pan, the others started to collapse (still puffy though) but they are very doughy inside. Do I need to leave them longer? Next time I will make them from scratch but since this was my first time baking popovers the mix would do just fine.
