I wanted to try the ciabatta recipe using my sour dough starter which needed feeding. I only had 4 ounces of AP flour, so I put in 4 oz. of wh wheat flour to come up with the 8 ounces needed. Is this bad? I am worrying that the oils in the wh wheat flour will not be good for the starter. Also, I normally discard the leftover starter when I do a feeding. You know how it says to remove all but 4 ounces. Is that right?Mary Lu, The whole wheat will work fine. Just change back once you have replenished your flour supply. Yes, you do discard at feeding.
