Hi Lisa, we do have a recipe for Mini Cheesecakes, which calls for using a bite-size cheesecake pan rather than a cupcake pan. While not quite the same as a cupcake pan, you may be able to adapt this recipe. When doing so, I would recommend using cupcake liners so that you can easily remove the mini cheesecakes.
