Hi Susan, I need to bake a 12" round x at least 2" tall cheesecake. I have the cake pan (12 x 3), it's just not a springform. I want it as a middle layer for a 4th of July cake, so I won't be using the crust part. I need to know: 1.) Can I just increase the recipe by about 15 - 20% ? 2.) Do I need to adjust the bake time? I'm planning to use parchment paper in the pan, and have another pan that I could for waterbath if necessary. Anything else I need to do/think about? Thank you much!!
