We imagine that's a very difficult hurdle to get around in the baking world, Peter. We haven't tested any of our recipes that call for baking powder and/or baking soda without them, so you're very much in the realm of experimentation, but there are a few things you can try.

You could use ripe starter and have that be the sole leavener.

We don't have one ourselves, but we did find a chocolate cake recipe online that's leavened with yeast that you could try, though we haven't tested it so we can't guarentee how it'll come out. If you make that one as written and like it, you can experiment with incorporating some of your starter. Replace 113g of the flour and 113g of the milk with 226g of your starter, ripe or discard.

Lastly, we have a couple of delicious flourless chocolate cake recipes that don't call for leavener at all. They don't have sourdough and can't really be adjusted to be made with it since there's no flour to replace, but they're scrumptious just the same if you wanted to give them a try.
