Hi, quick question, can I use Dutch process cocoa powder? The recipe explicitly calls for non-dutch process, but I live in Canada and raw cocoa powder is hard to find. Thank you so much, love the recipes on this site. Try this - Use 3/4 cup Dutch process cocoa powder PLUS 1/2 teaspoon cream of tartar, lemon juice OR vinegar. Happy Baking - Irene@KAF
