Hello! We'd recommend baking your sourdough the day after you've mixed up the dough. You can experiment leaving it in the fridge longer, keeping in mind that the longer the dough rests, the less it will brown (because the yeast eats ALL of the simple sugars) and the more likely it will collapse in your oven making it dense.
