You've discovered that you can achieve the round loaves by using a pan with sides to hold in the slack dough. If the sourdough is baked on a stone or baking sheet, you'll achieve the round loaf that rises up instead of spreading out by shaping the loaves using the skills of tightening or pre-shaping in mind.
