You've discovered that you can achieve the round loaves by using a pan with sides to hold in the slack dough. If the sourdough is baked on a stone or baking sheet, you'll achieve the round loaf that rises up instead of spreading out by shaping the loaves using the skills of tightening or pre-shaping in mind. This short videowill help with the skills for shaping as well as explaining how the slashes help the expansion of the loaf and prevent ruptures or side blow outs! Happy baking! Irene@KAF
