Sandra, this recipe can be a good way to start for those who aren't confident that their starter has been fed enough or is at the right level of maturity to fully raise the bread. It's like baking insurance. But you're correct, if your starter is well cared for and you know the optimum moment to add it to your bread recipe, you should be able to rely on it for both flavor and rising power. Barb@KAF
