Our oven says 425, but as far as I know, it has never been checked for accuracy. Might need to do that. Also, we are looking at a new range that has a convection oven. What does that do to bread baking since it speeds things up as I understand it? I tried the Rustic, but didn't get the taste we get on the Extra Tangy. Could I start the Rustic and let it overnight in the refrigerator like the Extra Tangy? Yes, try letting the Rustic sit overnight in the fridge - that'll definitely increase the acidity/sour taste. I've baked only briefly in convection ovens - don't like 'em AT ALL, so I'm not very good at it. They blow my parchment and it flaps around and sticks to whatever I'm baking! And yeah, I know things bake more quickly. Sorry I can't really give you any guidance. PJH
