Hi PJ, Thank you for your very prompt response! I'm on my way with the starter. Can I use the portion of the starter we're instructed to discard in step 5 for the sourdough waffles? I just hate to waste food. Roddy Yes, you can absolutely use it for sourdough waffles - just follow the directions; you have to start the night before you want the waffles. Enjoy! - PJH
