Okay, MaryJane, but I'm a bit confused. On the KAF website, under tips for sourdough starter, and how to make fed sourdough, it says specifically that if you are just feeding it (not going to use for recipe), it says to put it directly back in the refrigerator--no need to sit out for 2-4 hours. I understand what you are saying, and it makes perfect sense, to let it sit out for a while after each feeding, but I have all the notes printed out and trying to do it right and get confused with conflicting answers! Barbara, do it wither way. Sourdough's not something you can be too scientific about. It's as much art as anything else; it's a living thing. Hard to kill; easy to take care of. Feed it and put it back; put it back without feeding; just be sure to feed it once a week, one way or another. PJH
