I would like to use this recipe with a brotform on the second rise, but as it calls for a greased parchment sheet, will this be possible? Tiffany, absolutely use a brotform - be sure to flour it VERY well, as this dough can be sticky. And eyeball it to make sure you're putting the right amount of dough in - it rises quite vigorously.
