I made this recipe last week and it was great! Everyone at work couldn't guess the "secret" ingredient. It did take a few minutes longer to cook than the recipe called for but what I did was grate the zucchini, very lightly salt it and put it in a colander to drain for 30 minutes while I got the rest of the ingredients together. I then squeezed out as much of the water as I could and it worked great. It was still very moist.
