The coarse sugar is just for sprinkling on the top; if you don't have any, you can try blending 1 tablespoon of regular sugar with 1/4 teaspoon of cinnamon and sprinkling that on the top of the muffins to give them some extra shine...or simply skip this step. As for your question about freezing, muffins in general are wonderful baked goods to store in the freezer. You can store them wrapped individually for easy grab-and-go breakfast or snack muffins, or you can store them in a large zip lock bag. They can be thawed in the fridge, at room temperature or popped in the microwave, which is my go-to option in the mornings. Happy muffin making! Kye@KAF
