Robin, if your oven isn't getting hot enough for this method, invert a sheet pan and place it on an oven rack or use a pizza stone and preheat your oven for an hour. Using a peel or another inverted sheet pan, slide the evenly rolled out pita dough directly onto the inverted sheet pan or pizza stone. Because of your oven's inability to reach the hotter temperature, this direct contact with an already hot surface may increase your odds of getting the necessary puff created by steam.
