I've never had any trouble getting pitas to pop. Any bread dough seems to works. I like a water bread, but take your choice. The trick: Don't flip them over when you're rolling them out. Now if you can solve the mystery of pop-overs, I'm listening! I THINK I solved the mystery of popovers... stay tuned in the next few weeks... - PJH
