why the salt on top? What does it offer? I need to know!! Tomorrow is "Cheer Up the Lonely" Day so I'll be making cookies...and I think choc-chip is definitely in order. Salt is a flavor enhancer. It doesn't just add the taste of salt- it brings up the flavor of everything else. So, you sprinkle enough salt on top to be BARELY discernible as salt taste, and what it does is just enliven all the other flavors. Really - give it a try tomorrow! Sea salt is better because it isn't iodized, which can come across as a bitter taste. Good luck - PJH
