I know that everyone loves this Blitz bread for its speed, but I am one who normally has to do an overnight rise for anything becuase I make at night, go to bed and need it to be ready to go when I get home from work in the evening. Any reason why I can't just put it in the pan in the fridge overnight and pull out to come to room temp while I make dinner and then bake? So, 24 hours in the fridge? I'd cut the yeast back. Give it a try, tell us what happens - Thanks! - PJH
