PJ...the discussion of yeasts here is really helping me - thank you! While we're (sort of) on the subject, I bought a large bag of 'instant dry yeast' for my bread machine. Can I use it if I am making 'regular' yeast bread (mixed in my mixer, rising on the counter, baked in the oven?) If so, how would I convert? Thx. Hi Audrey, You absolutely can use the instant in your 'regular' yeast bread baking. Personally I use the amount called for in the recipe to keep it simple. Just keep in mind, if the recipe is calling for you to proof the yeast in a seperate amount of water, the recipe is counting on that liquid to keep the dough soft. I generally include it in with the rest of the liquid and put the yeast in with the flour. I hope this helps. Enjoy!! Jessica @ the bakers hotline.
