Hi Aditi! From my experience with this focaccia recipe, it does well with just one rise. And while I am not familiar with bellarise gold, my guess is that any instant yeast should work. I hope you enjoy the experience and the end result! I love how this has been coming out for me, it makes yeast breads quick and easy! I enjoy adding assorted flavors, such as using "everything bagel" seasoning on top, or parmesan cheese inside the dough, or other options!
