Hi Marv, you can certainly mix the dough and then bake it the next day. After the dough has risen you can simply move it to the fridge. The fridge will slow the rise down but not stop it fully, so anything more than 12-24 hours runs the risk of over proofing. The following day you can pick up where you left off in the recipe. Hope this helps!
