Oh my, that looks good! I need a piece of parchment to keep the drool off the desk... I have a couple of questions. Here in the NW, we do have some good peaches from time to time, but we also have wonderful pears, apples and berries (Marionberries are the best). Would each of these fruits work in this recipe, and if so, would any modifications be necessary? Finally, and I know some folks will cringe at this suggestion, but off season, would canned peaches work? If so, what modifications would be required? Hi, Erik - tricky questions, unfortunately. The main modifications would be sugar (which you could do to taste, so not much or an issue); and thickener. The amount of thickener would have to change for canned peaches, for frozen peaches, for berries, for apples... all I can say is, give it your best guess based on how juicy each fruit is. Frozen peaches are actually juicier than canned (drained). Berries are juicier than apples. Sorry I can't be any more specific than that. At least your experiments will be tasty! Good luck - PJH
