The cookies look fabulous but I don't drink coffee or have expresso. Is there a substitute I can use? Thanks! Hi Tricia. You can use just leave out the espresso powder, no harm done except taste-wise. MaryJane @ The Baker's Hotline The espresso powder certainly enhances the chocolate's flavor, but it doesn't affect the cookies' texture; so go ahead, leave it out. PJH
