Hi Diana, it sounds like it could use some extra time in the oven or that the pan you're using isn't conducting the heat evenly. A light-colored metal pan is ideal. Glass or dark-colored pans tend to set the outer edges early on, continue to dry them out as the bake time goes on, and the middle takes a long time to bake and can either collapse or, the opposite, dome up super high. (Sometimes collapsing after that.) We'd recommend trying a different pan and to ensure that it reads 200°F on a digital thermometer inserted into its center.
