Hi Sarah! Using honey in place of the sugar in this would likely result in it never setting up. There's no liquid in the recipe to take out (since you're adding extra liquid with the honey) and there's obviously no flour in the recipe for you to add extra of to make up for that extra liquid. If you can find honey powder (available online and in some stores as well) you could use that in place of the sugar, but the flavor will be different and the texture may also be softer/jigglier. Honey is sweeter than sugar, so you only need 3/4 the amount by volume.
