Hi Yael! For best results, we'd recommend using a vegan butter. We enjoy using Earth Balance's Vegan Butter Sticks. You're welcome to experiment with room-temperature coconut oil, but in our dairy-free cake blog we found that it makes cakes sink in the center. Happy baking! Annabelle@KAF
