We're glad you brought this up, Alice. We recommend using large eggs to bake all of our recipes, as that's what we use in the test kitchen during development and testing. If you're a baker who appreciates fine details, then you might want to check out our Recipe Success Guide, which you can find linked on the right-hand side of the page of all of our recipes.
