Corn is not actually one of the Five Grains. It was unknown in Israel. The Five Grains of Israel are wheat, barley, oats, rye, and spelt.
Corn is classified in a group of foodstuffs called "kitnyoth" in Hebrew, meaning that, according to the Rabbinate, they could realistically be visually confused with the Five Grains. Kitnyoth include corn, other grains not known in ancient Israel (such as quinoa), and various seeds or nuts (e.g., sunflower seeds) small enough to be misidentified as any of the Five Grains. The Ashkenazi tradition avoids consuming then during Passover, but the Sephardic tradition typically does not.
