Sue, to make Passover not quite as busy for yourself, you can make this cake ahead of time and freeze it for up to 2-3 months. I will say however, that the shorter the amount of time this cake is in the freezer, the better it will taste! The chocolate glaze can be prepared the day ahead of time and then kept in the fridge. Simply rewarm the glaze in the microwave or over a double-boiler before pouring it over the chocolate cake when ready to eat this tasty cake. Confession: this flourless chocolate cake is my absolute FAVORITE dessert...and there are a lot of tasty desserts out there. Be encouraged that your Passover guests are going to be impressed, indeed!
