Hi Barb, in most cases this starter will ripen in about 12-16 hours, unless your home is very cool. I wouldn't let it go 24 hours at room temperature. If you need to hold it for a few more hours, you could stick it in the refrigerator, but you'll need to use a little warmer water for the dough, to compensate for the cold starter.
