I have a silicone bread pan 11x4x2 1/2" - that I want to use as a Pullman pan, using a baking sheet on top as a weight in lieu of a lid. I checked the total volume of the pan and it's the same as a traditional 9x5 loaf pan. What weight of dough or quantity of flour would be right for this project? I'm afraid if I use a recipe calling for a 9x5 pan where the dough would be expected to rise above the rim there would be too much dough. Thanks, if you can help.
