Hi Brenda, Did you measure your flour by cups or by weight? It's easy to add extra flour when you measure by cups, and this can result in a drier baked good. For best results we recommend either weighing your flour, or using this method to measure you flour by volume. If you did weigh your flour, you might consider baking the muffins a little less, or adding a touch more butter or oil to the recipe.
