Thanks for sharing that memory, Nina! The vinegar called for in this recipe is used as an acid to react with the baking soda in an acid-base reaction to give the muffins a descent rise in the oven. Without the vinegar you may risk having some unreacted baking soda in the batter which make for a low rising and potential bitter/metallic tasting muffin. Happy baking!
