Hi Leslie, you could certainly substitute fresh buttermilk for the buttermilk powder in the Dutch Oven Dinner Rolls recipe. To do so, simply replace the 1 cup (227g) of water with lukewarm buttermilk and leave out the powered buttermilk. You could also substitute Bread flour for the All-Purpose and/or the Golden Wheat flour in this recipe. Since the Bread flour is higher in protein, it will develop a bit more gluten and will also absorb more water than the All-Purpose flour. Add more liquid, as necessary, in order to develop a soft, supple dough.
