I did this last week with a batch of the Honey Wheat Rolls (https://www.kingarthurbaking.com/recipes/honey-wheat-rolls-recipe) and a large oval covered roaster. I cut out an oval of parchment to fit the bottom of the pan, to avoid the drainage channels; then just put the shaped rolls in, let them rise there, and stuck them in the oven, removing the lid after about 10-15 minutes of baking. They came out great. (The roaster being a $5 thrift-store find made them even better....)
