Hi Ben, yes, if you consistently feed your sourdough starter Einkorn flour, it will eventually convert to an Einkorn starter. Keep in mind, however, that it generally takes almost as much time as creating a starter from scratch to fully convert a starter to a new flour source. That being said, you can still use the starter in the interim as long as it's rising and smells good. Just don't expect it to deliver all the properties of an Einkorn starter until it's had time to adjust to its new food source.
