Hi Sam! If you are looking to bake with your sourdough starter. Try taking it out of the fridge the day before you plan to use and feed it two times at 12 hour increments. After the second feeding and the starter has doubled in size, harvest the amount you need for your recipe to build your levain. Then, feed the remainder and put it back in the fridge to be used next time. Happy baking!
