Hi Victoria, a "drippy" starter could indicate that you added too much water the last time you fed it, or it could also mean your starter hasn't been fed in a while. Our starter feeding routine generally results in a starter that is pasty (but still easy to stir) right after a feeding. As it rises and ferments it becomes airier and thinner in texture. Ultimately, if it is allowed to over-ferment and fall, it will become much thinner in consistency. This is because the gluten structure gradually breaks down over time. It won't cause permanent damage to your starter if you forget a feeding or let it fall in this way, but when you have your starter out at room temperature it's helpful to line up your twice daily feedings with the period when the starter is considered ripe (at the highest point of rising, or just starting fall). This will help to keep the yeast more vigorous. We generally recommend feeding your starter and letting it sit out at room temperature for 2-4 hours (or until it starts bubbling) before you store it in the refrigerator.
