"Mise en place" means having everything out, measured, set up, and ready to use before you start cooking or baking. It's great because it means you can get your head into measuring all your ingredients, getting out all of your utensils and pots and pans and such, and putting them in recipe order. Then you can shift into cooking/baking mode and every ingredient and tool is already there where and when you need it. It saves time in the long run, and let's you focus on one thing at a time.
