Hi Carin, our general rule is that if the water is drinkable by humans, then it should be fine for your starter as well. That being said, very hard water can sometimes cause issues with bread (you can read more about this here). I hate to recommend purchasing a special water just for your starter, so I would start with the type of water you and your family enjoy, and that should work fine.
