Allow a moment of praise for Martin Philip. . . I thought I was achieving ‘acceptable’ results with KA products and recipes but got around to ‘ask the bakers’ why my loafs were not rising as tall as pictured in KA recipes. I was sent a link to Martin’s blog that explained the ’stretch and fold’ alternative to mixer kneading. Wow, what a difference in outcome - not to mention the enhanced ’dough therapy’ realized by getting your hands in the dough! A BIG thank you
