Hi Mimi, this isn't typically a method used with pies, although we've certainly considered this when it comes to baking bread. For pies, baking on a preheated pizza stone with a metal pan will offer many of the advantages of preheating the pan, without the difficulties of trying to transfer an unbaked pie into a hot pan.
