We totally agree, H D! Our Unbleached All-Purpose Flour can be an equally good choice for baking artisan breads, especially if that's the flour specified in the recipe. Many professional bakers do prefer this flour. On the other hand, if a recipe calls for our Bread Flour, it's likely because the added strength is necessary.
